A traditional German pot roast, marinated in a vinegar-based sauce and slow-cooked.

INGREDIENTS
Beef roast 1kg
vinegar 200ml
water 200ml
onion 1
carrot 1
celery stalk 1
bay leaves 2
juniper berries 5
cloves 5
sugar 1 tbsp
salt
pepper
vegetable oil
flour 3 tbsp
INSTRUCTIONS
Step1: Marinate beef with vinegar, water, vegetables, spices for 2-3 days. Turn occasionally.
Step2: Remove beef, pat dry. Brown in oil. Add marinade, simmer 3hr. Thicken sauce with flour mixed with water.
Step3: Serve with potato dumplings or red cabbage.
