Pickled Herring (Inlagd Sill)

A traditional Swedish appetizer, herring pickled in a sweet and sour brine.

INGREDIENTS

Herring fillets 500g
vinegar 100ml
water 100ml
sugar 50g
onion 1
allspice 1 tsp
bay leaves 2

INSTRUCTIONS

Step1: Clean, fillet herring. Brine in saltwater 12hr. Drain.

Step2: Boil vinegar, water, sugar, spices. Cool. Layer herring and sliced onion in a jar. Pour over brine.

Step3: Refrigerate for 48hr before serving.
