INGREDIENTS
Beef tripe 1kg
Hominy 500g
Onion 1
Garlic 4 cloves
Guajillo chiles 5
Bay leaves
Oregano
Lime
Salt
Pepper
INSTRUCTIONS
Step1: Clean and cut tripe. Boil with onion, garlic, salt for 2hr. Add hominy, cook 1hr.
Step2: Blend soaked guajillo chiles, add to soup. Season with oregano, pepper.
Step3: Serve with lime wedges and optional toppings like chopped onions, cilantro, and chili peppers.
