Kartoffelsalat (Potato Salad)
A vinegar-based potato salad without mayonnaise, commonly found in southern Germany.

INGREDIENTS
Potatoes 1kg
onion 1
vinegar 3 tbsp
mustard 1 tbsp
vegetable broth 200ml
olive oil 50ml
chives
salt
pepper
INSTRUCTIONS
Step1: Boil potatoes, peel and slice. Mix warm broth with vinegar, mustard, salt, pepper. Pour over potatoes.
Step2: Add chopped onion, olive oil, chives. Toss gently. Serve warm or at room temperature.
