INGREDIENTS
Beets 3 medium
Cucumber 2
Radishes 5
Boiled eggs 4
Sour cream 200g
Dill
Spring onion
Lemon juice 2 tbsp
Water 2l
Salt
INSTRUCTIONS
Step1: Boil beets until tender, peel, grate. Set aside.
Step2: Chop cucumbers, radishes, spring onion, dill.
Step3: Mix grated beets, chopped vegetables, lemon juice, salt in water. Chill for 2hr.
Step4: Serve cold with boiled eggs and a dollop of sour cream.
