INGREDIENTS

Chicken breast 500g
green curry paste 50g
coconut milk 400ml
bamboo shoots 200g
eggplant 200g
fish sauce 2 tbsp
sugar 1 tbsp
basil leaves
kaffir lime leaves 4
vegetable oil

INSTRUCTIONS

Step1: Sauté curry paste in oil. Add chicken, cook until browned.

Step2: Add coconut milk, bamboo shoots, eggplant, lime leaves. Simmer until vegetables are tender.

Step3: Season with fish sauce, sugar. Garnish with basil.
