INGREDIENTS

1 package (8 ounces) semi-sweet baking chocolate
1 package (8 ounces) cream cheese, softened
3 cups confectioners' sugar
1 tablespoon pure vanilla extract
1/2 cup toasted chopped walnuts (optional)

INSTRUCTIONS

Prepare an 8-inch square pan by lining it with foil, allowing the foil to overhang the sides of the pan. Lightly spray the foil with non-stick cooking spray.

Melt the semi-sweet baking chocolate as per the instructions on the package. In a large bowl, use an electric mixer to beat the cream cheese until smooth. Gradually add the confectioners' sugar at low speed, ensuring it blends well with the cream cheese. Next, add the melted chocolate and vanilla extract to the mixture and mix well. Stir in the chopped walnuts if you're using them.

Spread the fudge mixture evenly in the prepared pan.

Refrigerate the fudge for at least 1 hour or until it is firm. Once set, use the overhanging foil to lift the fudge out of the pan and onto a cutting board. Cut the fudge into 25 squares or triangles. Store the fudge in the refrigerator.
