3 pounds sweet potatoes, peeled and cut into 1-inch cubes (about 7 to 8 cups)

INSTRUCTIONS

Heat your oven to 350°F (175°C). In a large bowl, combine the brown sugar and pumpkin pie spice. Add the sweet potatoes and toss them thoroughly to ensure they're well coated. Arrange the sweet potatoes in a 13x9-inch baking dish.
