Borshch with Beans
A variation of traditional borscht, enriched with beans for extra protein.

INGREDIENTS
Beans 200g
Beef 300g
Beets 3 medium
Carrots 2
Onion 1
Potato 2
Cabbage ½ head
Tomato paste 200ml
Garlic 3 cloves
Salt
Pepper
Water 2l
INSTRUCTIONS
Step1: Soak beans overnight. Boil until tender. Set aside.
Step2: Boil beef in water to make broth. Remove beef, shred.
Step3: Sauté beets, carrots, onion. Add to broth with potatoes, cabbage.
Step4: Add cooked beans, tomato paste, garlic, salt, pepper. Simmer until vegetables are tender. Add shredded beef. Serve with sour cream.
