Beef Enchiladas

INGREDIENTS

1 1/2 cups water
1 can (8 ounces) tomato sauce
1 package enchilada sauce mix
1 pound ground beef
8 corn tortillas, warmed
1 cup shredded Cheddar cheese

INSTRUCTIONS

Preheat your oven to 350°F. In a medium saucepan, combine the water, tomato sauce, and enchilada sauce mix. Bring the mixture to a boil, then reduce the heat to low. Let it simmer for about 5 minutes, or until the sauce has thickened, stirring occasionally. Once done, set the sauce aside.

In a medium skillet over medium-high heat, brown the ground beef until it's fully cooked. Drain off any excess fat. Stir 1/2 cup of the prepared enchilada sauce into the cooked beef.

Dip each tortilla into the enchilada sauce to coat it lightly. Place about 1/4 cup of the beef filling on each tortilla. Roll the tortillas up tightly and place them seam-side down in a lightly greased 11x7-inch baking dish. Pour the remaining enchilada sauce over the rolled enchiladas and sprinkle them evenly with the shredded cheese.

Bake the enchiladas in the preheated oven for 15 minutes, or until the sauce is bubbly and the cheese has melted. The enchiladas should be hot and the cheese beautifully golden.
