Beef and Guinness Stew

INGREDIENTS
Beef stew meat 1kg
onions 2
carrots 3
celery stalks 2
flour 3 tbsp
Guinness beer 500ml
beef stock 500ml
tomato paste 2 tbsp
thyme
salt
pepper
parsley
INSTRUCTIONS
Step1: Coat beef in flour, brown in a pot. Add chopped vegetables, cook briefly.
Step2: Pour in Guinness, beef stock, add tomato paste, thyme. Season. Simmer 2hr.
Step3: Garnish with parsley. Serve with mashed potatoes.
