Start by preheating your oven to 400 degrees F (about 200 degrees C).
Rinse the Brussels sprouts under cold water. Trim off the stem ends and remove any wilted or discolored outer leaves. Cut each Brussels sprout in half from top to bottom.
Place the halved Brussels sprouts in a large mixing bowl. Add the olive oil, salt, and pepper. Toss well to coat all the sprouts evenly with the seasoning.
Spread the Brussels sprouts out in an even layer on a baking sheet. Make sure they have enough room and aren't too crowded, which helps them roast more evenly.
Roast in the preheated oven for about 20-25 minutes. Halfway through the roasting time, you might want to give the pan a shake or use a spatula to turn the sprouts for even browning.
Once the Brussels sprouts are nicely browned and tender, remove them from the oven. Drizzle with balsamic vinegar and toss to coat all the sprouts. The residual heat will help to slightly caramelize the vinegar, adding a rich flavor.
Serve the roasted Brussels sprouts warm as a delicious side dish. They pair well with a variety of main courses, such as roasted meats, grilled chicken, or even as a hearty addition to a vegetarian meal.
