Begin by preheating your oven to 400 degrees F (about 200 degrees C).
Wash the carrots and peel them if desired. If they are large, you can cut them lengthwise into halves or quarters so they cook evenly. If they are baby carrots, you can leave them whole.
In a large mixing bowl, combine the olive oil, honey, thyme, salt, and pepper. Stir well to create a uniform mixture.
Add the carrots to the bowl with the seasoning. Toss them until they are well coated with the mixture.
Arrange the carrots in a single layer on a baking sheet. Ensure they are not too crowded to allow them to roast evenly.
Roast in the preheated oven for about 20-25 minutes, or until the carrots are tender and lightly caramelized. Halfway through, you may want to turn the carrots to ensure even cooking.
Once the carrots are done, you can optionally drizzle a little more honey or sprinkle some additional thyme over them for extra flavor.
Serve the roasted carrots hot as a delicious side dish. They are a great accompaniment to a wide range of main courses, from roasted meats to vegetarian entrees.
