INGREDIENTS

6 boneless pork chops, 1/2 to 3/4-inch thick
2 1/4 teaspoons organic ground coriander, divided
1/2 teaspoon organic ground cumin
1/4 teaspoon organic garlic powder
1 tablespoon olive oil
3/4 cup orange juice
1/2 cup chicken stock
2 teaspoons cornstarch
2 green onions, thinly sliced

INSTRUCTIONS

Season the pork chops with salt and pepper. In a small bowl, mix together 2 teaspoons of the ground coriander, cumin, and garlic powder. Sprinkle this spice mixture evenly over the pork chops.

Heat the olive oil in a large nonstick skillet over medium heat. Place the pork chops in the skillet and cook them for about 5 minutes on each side, or until they reach your desired level of doneness. Once cooked, remove the pork chops from the skillet and set them aside in a warm place.

In a separate small bowl, whisk together the orange juice, chicken stock, cornstarch, and the remaining 1/4 teaspoon of ground coriander until smooth. Pour this mixture into the skillet and bring it to a boil. Stir in the sliced green onions and reduce the heat to low. Let the sauce simmer for 1 minute, or until it thickens.
