Osso Buco
A Milanese specialty of braised veal shanks with a gremolata topping.

INGREDIENTS
Veal shanks 6
flour
butter 50g
onion 1
carrot 1
celery stalk 1
white wine 200ml
beef stock 500ml
tomatoes 2
garlic 2 cloves
lemon zest
parsley
olive oil
salt
pepper
INSTRUCTIONS
Step1: Dredge shanks in flour, brown in butter, oil. Remove. Sauté chopped vegetables.
Step2: Add shanks back, pour wine, stock, add tomatoes. Simmer 2hr.
Step3: Mix lemon zest, parsley, garlic for gremolata. Sprinkle over osso buco.
