Moroccan Tagine
A slow-cooked North African stew with tender lamb and aromatic spices.

INGREDIENTS
Lamb 1kg
onions 2
garlic 4 cloves
carrots 3
potatoes 3
dried apricots 100g
chicken stock 500ml
cumin 1 tsp
cinnamon 1 tsp
ginger 1 tsp
turmeric 1 tsp
coriander leaves
salt
pepper
olive oil
INSTRUCTIONS
Step1: Brown lamb in tagine or pot with oil, garlic, spices. Add chopped onions, carrots, potatoes. Pour in stock.
Step2: Cover, simmer 1hr. Add apricots, cook 30m. Garnish with coriander.
