Mapo Tofu
A popular Sichuan dish with tofu, ground pork, and a spicy bean sauce.

INGREDIENTS
Soft tofu 500g
ground pork 200g
doubanjiang (fermented bean paste) 2 tbsp
garlic 2 cloves
ginger 2 tsp
Sichuan peppercorns 1 tsp
soy sauce 1 tbsp
beef broth 200ml
cornstarch 1 tbsp
spring onions 2
sesame oil 1 tsp
INSTRUCTIONS
Step1: Brown pork with doubanjiang, add garlic, ginger, peppercorns. Add soy sauce, broth.
Step2: Cube tofu, add to pan. Simmer gently 10m. Mix cornstarch with water, add to thicken sauce.
Step3: Sprinkle with spring onions, drizzle sesame oil. Serve with rice.
