INGREDIENTS

1 cup (2 sticks) softened butter
3/4 cup confectioners' sugar
1 teaspoon pure lime extract
2 cups flour
1 package (12 ounces) white chocolate chips
1 teaspoon sky blue food coloring
1/2 teaspoon sunflower yellow food coloring

INSTRUCTIONS

Preheat the oven to 300°F (150°C). Begin making the cookies by beating the butter and sugar together in a large bowl using an electric mixer on high speed until the mixture is light and fluffy. Add the lime extract and continue beating on medium speed until well incorporated. Gradually mix in the flour on low speed until thoroughly combined. Divide the dough into two equal parts.

On a lightly floured surface, roll out one portion of the dough to a thickness of about 1/4 inch. Use your favorite cookie cutters to cut the dough into various shapes. Place the cut cookies on ungreased baking sheets. Repeat this process with the remaining dough, rerolling any scraps.

Bake the cookies for 15 to 18 minutes, or until the edges are just beginning to turn a light golden brown. Once done, remove the cookies from the oven and transfer them to wire racks to cool completely.

To prepare the glaze, melt the white chocolate chips following the instructions provided on their packaging. Once melted, stir in the sky blue and sunflower yellow food coloring to achieve the desired color. To glaze the cookies, either dip the top of each cookie into the glaze by holding it by the edge, or spoon the glaze over the cookies. Place the glazed cookies back on the wire rack to set. Optionally, you can sprinkle them with green or other colored decorating sugar before the glaze hardens for additional decoration.
