INGREDIENTS
Chicken breasts 2
flour 100g
eggs 2
panko breadcrumbs 200g
curry powder 2 tbsp
onion 1
carrot 1
potato 1
chicken stock 500ml
rice 500g
vegetable oil (for frying)
INSTRUCTIONS
Step1: Bread chicken in flour, egg, panko. Fry until golden. Slice into strips.
Step2: Sauté chopped onion, carrot, potato. Add curry powder, stock. Simmer until vegetables are tender.
Step3: Serve chicken over cooked rice, topped with curry sauce.
