Kalakukko (Fish Pie)
A traditional Finnish fish pie with a dense rye crust, filled with fish and bacon.

INGREDIENTS
Rye flour 500g
wheat flour 100g
water 300ml
salt 1 tsp
butter 100g
small fish (perch or vendace) 500g
bacon 200g
egg 1
INSTRUCTIONS
Step1: Mix flours, water, salt to form dough. Roll out, line pie tin.
Step2: Fill with layered fish, bacon. Cover with dough, seal edges. Brush with egg.
Step3: Bake at 180°C for 2-3hr. Serve hot or cold.
