Jollof Rice

INGREDIENTS

Rice 500g
chicken 500g
tomatoes 4
tomato paste 2 tbsp
onions 2
red bell peppers 2
garlic 3 cloves
ginger 2 inch
scotch bonnet pepper 1
thyme 1 tsp
chicken stock 1l
vegetable oil
salt

INSTRUCTIONS

Step1: Blend tomatoes, bell peppers, garlic, ginger, scotch bonnet. Sauté with chopped onions in oil.

Step2: Add chicken, brown. Add tomato paste, blended mixture, cook 10m. Add rice, stock, thyme, salt. Cover, simmer until rice is cooked.
