INGREDIENTS

3 tablespoons yellow cake mix
1 tablespoon chopped dried pineapple
1 tablespoon chopped dried mango
1 teaspoon packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
A small amount (to taste) of pure vanilla extract

INSTRUCTIONS

In a small bowl, combine all the ingredients except the vanilla extract until everything is well blended. Transfer this mixture into a small plastic bag and seal it with a festive ribbon or twist tie.

Place the sealed bag inside a small microwavable coffee mug, along with a small bottle of vanilla extract, to create a charming gift. Attach a tag with the instructions for making the Fruitcake in a Mug (provided below).

To prepare the Fruitcake in a Mug: First, remove the bag of Fruitcake Mix and the bottle of vanilla extract from the mug. Microwave 1 tablespoon of butter in the coffee mug on HIGH for 30 seconds or until it's melted. Stir in the contents of the Fruitcake Mix, 2 tablespoons of milk, and 1/2 teaspoon of pure vanilla extract until well combined. Microwave on HIGH for about 1 minute or until the center of the cake appears almost set. Let the cake stand for 5 minutes before serving. Be cautious, as the mug may be hot; use pot holders to remove it from the microwave. This recipe makes enough for 1 full mug or 2 half-mug servings.
