INGREDIENTS
Beef 500g
potatoes 3
sweet potato 1
corn 2 ears
carrot 2
bell pepper 1
onion 1
beef broth 1l
tomatoes 2
pumpkin 500g
bay leaf
salt
pepper
INSTRUCTIONS
Step1: Brown beef. Add chopped onions, pepper. Cook until soft.
Step2: Add diced potatoes, sweet potatoes, carrots, corn, tomatoes, beef broth, bay leaf, salt, pepper. Simmer 1hr.
Step3: Add chunks of pumpkin last 20m. Serve in hollowed pumpkin if desired.
