INSTRUCTIONS
Preheat your oven to 375 degrees F (190 degrees C). Take a 9-inch pie dish and set it aside.
Peel, core, and slice the apples into thin slices. To prevent browning, you can toss them in a bit of lemon juice if you like.
In a large bowl, combine the sliced apples, sugar, and cinnamon. Toss until the apples are evenly coated with the sugar and cinnamon mixture.
Place one of the pie crusts into your pie dish. Gently press it down into the dish and up the sides. Pour the apple filling into the crust, and then dot the top of the filling with small pieces of butter.
Place the second pie crust over the filling. Trim any excess dough from the edges and then crimp the edges to seal the pie. Make a few slits in the top crust to allow steam to escape during baking.
Bake the pie in the preheated oven for about 45-50 minutes, or until the crust is golden and the filling is bubbly. If the edges of the pie start browning too quickly, you can cover them with aluminum foil.
After baking, allow the pie to cool for at least 2 hours before serving. This helps the filling to set, making the pie easier to slice.
Serve your apple pie warm or at room temperature. It goes wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream.
